Traditional Foods
From Linnea Koagedal

In Sweden we like "Open
faced sandwiches" and here is
one of the favorites with
shrimp.

Also - up in Northern part of
Sweden we eat this dumpling
called "palt". It is made of
peeled, grated potatoes,
barley and white flour, salt
and water and made into a
dumpling. The dumpling is
filled with pork, could be fresh,
salted or smoked. It is cooked
in a pot and when done, eaten
with lots of butter, mmmmmm
good. In Sweden, you can buy
all kinds of "palt"  - like blood
palt, liver palt etc.

Outdoor dining in Sweden
This is a delicacy up in the Northern parts of
Sweden. Every year in the fall, the canned
surstromming can is purchased. By this time
there is a slight swelling of the can -  the fish
is ready to come out. Because of the “strong
odor” the can is opened under running
water outside! Now the fest begins. What
you need is the fish cut up in little pieces,
new potatoes, “tunnbrod” (thin hardtack),
raw onions and some will put sliced
tomatoes on the sandwich too.

To help to rinse it down you have some
“akvavit” and sing the traditional drinking
songs.

ENJOY and SKAL!
A Southern Sweden specialty is crayfish. It is a
small lobster like shellfish. It is a big hit in the fall.
